Nothing says Valentine's Day like sweets! I'd love to see you enjoying CHOCOLATE & WINE FOR VALENTINES this Saturday at The Granary in Morgan Hill. I'll be your host from 2 until 5. This is a really nice affair with a bunch of local chocolatiers and wineries and restaurants giving out lots of tempting tastes for you. There's a silent auction bursting with goodies too! It supports my good friends at the Teachers Aid Coalition! CLICK for details on the fun>http://www.tacmh.org/
...And...here's something sweet to whip up for your Valentines!
Faith Hill's Southern Coca-Cola Cake
1 pkg. white cake mix
4 tablespoons unsweetened cocoa powder
1 stick butter, melted
1 cup coke
1/2 cup buttermilk
2 large eggs
1 teaspoon vanilla
1 1/2 cups marshmallows.
Preheat oven to 350. Spray a 13x9 pan with vegetable oil. Mix together cake mix, cocoa powder, melted butter, coke, buttermilk, eggs and vanilla in a large mixing bowl. Blend with an electric mixer for 1 minute. Scrape sides and beat for 2 more minutes. Batter should be mixed well. Fold in the marshmallows and pour into the prepared pan. Bake cake for 40-42 minutes. Remove pan from oven and begin frosting.
Frosting
1 stick of butter
4 tablespoons unsweeted cocoa powder
1/3 cup coca cola
4 cups confectioners sugar
1 cup chopped pecans (optional)
Place butter in a medium sized sauce pan over low heat. Melt butter, stir in cocoa powder and coke. Let mixture come to a boil, stir constantly and then remove from heat. Stir in the confectioners sugar until smooth. Fold in pecans. Pour over cake, spreading to the sides. Cool about 15 minutes. Enjoy!
